mango blueberry quinoa salad.

yesterday, while i was munching on my afternoon snack of peaches & blueberries, i brainstormed concoctions to make use of the impressive amount of end-of-summer produce we’ve got in the house. i knew i wanted to do something with the fruit other than use it in a dessert dish.

how happy was i to stumble across this delicious quinoa dish?!

what’s that you say?


i am TOTALLY making this tonight.

i’ll add peaches onto the mango blueberryness as well as some chickpeas for even MORE fiber and texture. i’m a huge quinoa fan. it cooks in bulk, keeps for days, is a versatile base for sweet or savory recipes, and is a great source of fiber and protein. in fact quinoa is a source of COMPLETE protein, supplying all 9 essential amino acids. BOOM. whole grain win.

here’s the recipe in short. more info on the scrumptious veggie-belly!

ingredients for the quinoa
1/2 cup quinoa
1 cup water

ingredients for the fruits and veggies
½ cup fresh blueberries
½ cup cubed ripe mangoes
½ cup cubed cucumbers
1/2 tablespoon dried cranberries

ingredients for the lemon basil dressing
1½ tablespoons extra virgin olive oil
2 tablespoons lemon juice
1/4 teaspoon lemon zest
10 Basil leaves, chopped finely
Salt and pepper

method: preparing the quinoa
rinse quinoa under cold running water and drain.
if using a rice cooker: measure 1 cup quinoa to 2 cups water and combine in rice cooker. cook on white rice setting. let cool when cooking is finished.

if using stove top: bring 1 3/4 cups water to a boil in a small pot. Stir quinoa and a pinch of salt into water. Reduce heat, cover and simmer until tender and liquid is absorbed, 15 to 20 minutes. uncover and let cool.

method: preparing the fruits
combine the fruits in a bowl and refrigerate till you are ready to serve the salad.
whisk together all the dressing ingredients, except the chopped basil. refrigerate dressing until you are ready to serve.
chop and add the basil to the dressing just before serving.

just like september, which doesn’t completely belong to summer or fall, so does this album. it’s full of the warmth of summer and undertones of winter’s cold distance. nostalgia seeps into every note. we’re carried along on a beautiful soundscape of pop melodies that resonate the past & our dreams.

end of summering.

saturday we embarked on what i would consider the last of our summering activities–an annual trip to six flags great america. and while the crisp air & light warm sunshine felt just as the beginning of fall should, the mood was completely summer. a carefree saturday with no place to be but riding coasters with friends. not a worry in the world.

ps. thanks to blair & dave for a perfect double couple date. our full-on suburbanite experience made me a very happy girl.

do you have any end of summer activities? for the past two years we’ve closed our summer with this trip.

after the fall temperatures this week i’m feeling ALL SORTS of ready for autumn activities. more obsessions on that to come…

ruby red sunrise.

i’m home sick today. ack!

which means i had a fitful night of sleep and was awake to catch the chicago sunrise over montrose harbor, a sight i’ve been missing the past few weeks.

gorgeous ruby reds and soft yellow tones.

i told the boy that this sunrise reminded me of the lion king.

notting hill carnival.

each august bank holiday, the very posh notting hill neighborhood in west london hosts the notting hill carnival–a two-day celebration of caribbean culture. complete with jerk chicken & plantains, red stripe beer, steel drum bands, and a banksy street art spotting. this event had a sampling of just about every type of londoner you can find.

i went with a few new friends last weekend and it was an incredibly vibrant and eclectic. i really felt like i was experiencing life as a londoner. here are some shots from the day–mostly of the scenic notting hill neighborhood.

admittedly, i was busy enjoying red stripe and plantains.

songs for sweet london

oh man have i been getting my music on over here. nothing calls for some tunes like strolling around a new city. i’ve enjoyed having music as a backdrop for london’s beautiful summery meets autumn scenery.

below is my soundtrack to london. you’ll notice quite quickly that a majority of these songs are of dreamy, hazy, vintage-y love & well stocked with sweet sounding female vocals that echo a more carefree time. there’s also a good mingling of fun poppy beats (aka felix da housecat!).

i must confess, that this girl is subject to little homesickness at times. i’ve found a perfect remedy is listening to music that reminds me of the one i’m missing. these songs do just that.
